<p>The freezing rain pelted down hard outside, rivulets froze on the dining room window panes. And then at 7:23 p.m. on the dot, drum roll please, the 5,000th person subscribed to <em>Through Her Looking Glass</em>. Yes, 5000.</p>

<p>So woot woot. Party time! I think this is worthy of a celebration, a party for 5,000. And prizes too.</p>
<p>Are you someone who never wins prizes? Then you&#8217;re in good company with me. My oldest son, who claims he never wins ANYTHING, just won a $100 gift card to a sports store last month. He entered a contest on FB (or maybe Twitter) and was recently notified he was the winner. Hopefully everyone gets to win something along the way, because it&#8217;s exciting! Especially when it&#8217;s unexpected.</p>

<p>The biggest prize I ever won took place last year. And interestingly, it was for someone else. I was honestly so incredibly happy for her. Because she has a heart of gold. Many of you know our youngest son Hudson (7) has Down syndrome and autism. He also has learning delays, uses a speech device and wears pull-ups.</p>
<p>Thankfully he&#8217;s able to communicate in other ways besides words and brings us all great joy. He&#8217;s been <a href="https://www.throughherlookingglass.com/this-way-to-holland/">a big unexpected blessing in our family</a>. He&#8217;s also lucky (as are we) to have a wonderful teacher at school, not to mention a whole slew of dedicated therapists and assistants cheering him on.</p>

<p>One morning last year I was visiting my buddy <a href="https://savoryspin.com/">Shashi&#8217;s blog</a> and she was running a contest by Smithfield (the pork people). You entered by naming someone in your community who makes a big difference and telling how. It took all of a nano-second to think of Hudson&#8217;s teacher, Mrs. Livingstone.</p>

<p>If anyone makes a difference in our world and Hudson&#8217;s, she does. <a href="https://www.throughherlookingglass.com/special-place-in-heaven/">And other special education teachers we&#8217;ve encountered along the way too</a>. I wrote a few choice words about Mrs. Livingstone in the comment section &#8211; about how blessed Hudson and his classmates are to have her for their teacher. I never thought of it again.</p>
<p>Then a month or so later, I got an e-mail from Smithfield saying Hudson&#8217;s teacher had won the prize. At first I wondered if it was a hoax. But she got an e-mail too. <em>And then she got the prize &#8212; a $1000 gift card to Walmart.</em> Figures. I finally win something big and it&#8217;s for someone else. Lol.</p>
<p>But truthfully, I couldn&#8217;t have been happier that she won. Of all people, she deserved it. It seems our culture celebrates the sports and movies stars, but the crucial people, those often selfless individuals who educate, shape and mold our most precious assets, our children, not so much. That&#8217;s why I was so thrilled she won the gift card.</p>
<p>So back to the prize today on THLG. Even at a virtual party, <em>someone</em> should get a real PRIZE. Don&#8217;t you think? But who? You can&#8217;t exactly beat a piñata or pin-the-tail-on-the-donkey virtually. Or if you can, I don&#8217;t know how. So I thought long and hard about WHO should get the prize. And finally it came to me. Two people will get prizes today.</p>
<p>Prize #1 goes to the very first reader who ever subscribed to THLG and is still a reader here today. Because she had faith in me, even when I didn&#8217;t. And that subscriber is, drumroll please&#8230;. Carrie W. of Easley, SC. Woot woot!</p>

<p>I wish it was a larger gift card ladies, but in the food blogosphere, I&#8217;m still relatively tiny. (If only we were talking waist size.)</p>

<p>You only need a few pantry staples to make this decadent <strong>Brick Street Chocolate Cake recipe</strong>, including granulated sugar, unsalted butter (softened to room temperature), pure vanilla extract, eggs (also at room temperature), cake flour, cocoa powder (sifted), baking soda, and salt.</p>

<p>I bake this Brick Street cake in a two-piece, round, metal <strong>angel food cake pan</strong>, also called a tube pan. There is a hollow tube going up the center of the pan. It measures 9.5&#8243; across at the top and 8&#8243; across at the base and is 4.25&#8243; high. The bottom and center hollow tube are one piece and lift up and out of the sides of the pan. Unfortunately, there aren&#8217;t standard size baking pans around the world, making it difficult, but I hope this gives you a good idea.&nbsp;</p>

<span style="display: block;">I bake this Brick Street cake in a two-piece, round, metal angel food cake pan, also called a tube pan in some places. There is a hollow tube going up the center of the pan. It measures 9.5" across at the top and 8" across at the base and is 4.25" high. It is by Ecko. The bottom and center hollow tube are one piece and lift up and out of the sides of the pan. Unfortunately there aren't standard size baking pans around the world, making it difficult, but I hope this gives you a good idea. Many others have baked this in a large bundt pan as well, with good success.</span><div class="wprm-spacer"></div>

So many of you know the original <em>Famous Brick Street Chocolate Cake</em> recipe was developed for convection oven only.</p>
<p>The recipe was originally given to me by a kind southern friend. It&#8217;s a luscious, dense, to-die-for chocolate cake recipe from the lovely, historic <em>Brick Street Cafe</em> in Greenville, SC where I lived for many years.</p>

(Or suit.) Important to have in the wardrobe (recipe box) when the occasion arises. Not like you&#8217;ll need it every day or even every week, but there when you need it. Yes, that&#8217;s exactly how I feel about this luscious chocolate cake.</p>
<p>So I&#8217;ve been on a quest for some time (years) to find the perfect chocolate cake recipe. Dense and rich. With a to-die-for ganache icing. And not too many crazy steps to put it together. Yeah. Thought I found that recipe a few years ago. There was a chocolate cake recipe I really loved. But then I found this easy recipe for <em>Brick Street Chocolate Cake</em>.</p>
<p>I was initially told this recipe was for convection oven only and would turn out &#8220;soupy&#8221; in a regular (conventional) oven. Not to waste my time or ingredients even trying it in a regular oven. So who wants a soupy chocolate cake? Not me. I&#8217;m all about saving a dime too. And since I always do as I&#8217;m told (ahem), I published the <em>Brick Street Chocolate Cake</em> recipe for convection oven only.</p>
<p>BUT.</p>
<p>Last week a reader commented on the site that she had gone ahead and baked the cake in a regular, conventional oven and it turned out great.</p>
<p>Say WHATTTT???</p>
<p>So unfortunately, over the past Thanksgiving and Christmas holidays there were literally thousands of disappointed people who weren&#8217;t able to bake this cake because they didn&#8217;t have a convection oven. And of course I felt terrible about that. But now the tune has changed to a much cheerier one, and just in time for Valentine&#8217;s Day.</p>
<p>I&#8217;m delighted to say I baked a <strong><em>Brick Street Chocolate Cake for CONVENTIONAL Oven</em></strong> today in a regular, conventional oven. It turned out great: dense, rich and every bit as delicious as the original convection oven recipe. So pour yourself a big glass of milk and let&#8217;s clink!</p>
<p>All I can think of is&#8230;. &#8220;they said she couldn&#8217;t do it, and she went ahead and did it.&#8221; Many thanks to brave <em>THLG</em> reader and baker Caitlin who forged on ahead and blazed the trail, went right ahead and tried it anyway!</p>

There is a hollow tube going up the center of the pan. It measures 9.5" across at the top and 8" across at the base and is 4.25" high. It is by Ecko. The bottom and center hollow tube are one piece and lift up and out of the sides of the pan. Unfortunately there aren't standard size baking pans around the world, making it difficult, but I hope this gives you a good idea. Many others have baked this in a large bundt pan as well, with good success.</span><div class="wprm-spacer"></div>
