This Fudgy Grasshopper Ice Cream Pie is a refreshing treat in summertime. It was Charlie’s 9th birthday last week and I always let the kids pick their favorite birthday cake or dessert. Charlie chose this Fudgy Grasshopper Ice Cream Pie. I was thrilled, because I’ve been hankering to make an ice-cream pie. The temperature fluctuations are still pretty big around here. Last week it was sweltering, nearly 90 degrees on Charlie’s birthday, perfect for this delicious and easy to make ice-cream pie.
Charlie had some particular requests. He wanted two different ice cream layers, cookies and cream on the bottom and mint chocolate chip on the top. So we did that, easy enough, though my recipe below calls for mint chocolate chip ice cream only. Do what you like!
This Fudgy Grasshopper Ice Cream Pie is all about layers. Chocolate graham cracker crust, ice-cream, Thin Mint cookies and fudge. So if you’re into layered ice-cream pies, this is the one for you!
Press chocolate graham cracker crumb mixture into pie plate and freeze.
Layer crust with ice cream, hot fudge sauce and Girl Scout Thin Mint cookies. Yum!!!
Now add that second layer of ice-cream…you’re almost done. Top with remaining hot fudge sauce. We could stop here, but….
I absolutely can’t resist mounds of whipped cream sprinkled with crumbled cookies for a dramatic show stopper! This is a gorgeous and easy ice cream pie!

Awww. Nine years old. The last single digit year….then they are all grown up. 🙂
Thin Mint cookies. That’s brilliant. Do the instructions tell you how to buy Thin Mint cookies from the girl scouts months ago yet not eat them until this pie is called for? You must have the self control of a saint.
Isn’t it cute how our young men have very specific foodie requests. Maybe cooking school is in the future. Better yet, maybe they will start cooking for the family. A mom can dream.
Yes, it was tricky with the Thin Mint cookies Karen. We bought 4 boxes this year from two separate adorable Brownies at our church. We promptly ate the three boxes, and I hid the last one in the pantry behind the ice cream maker that’s fairly tall. I don’t think any of the boys knew I had bought four boxes. So that was good. And thankfully I forgot about them for a while. When I rediscovered them it was just in time to make this ice cream pie.:) (You could also use Keebler Grasshopper chocolate mint cookies which are available all year…)

Not fair, Allie, not fair! Then again, CHARLIE, all requests are fair when you turn nine!

Oh NNNOOO Allie! This looks phenomenal! The reason that’s a problem is – I want this so badly right now, and I’m about to go on vacation. I can’t possibly spare the calories, but let me tell you girl – if I could, that Grasshopper Ice Cream Pie would be looooong gone!
I want the pie for my birthday!! Wow does that look delicious!! What an awesome mom you are!!

I can’t believe how big Charlie is getting. Belated Happy Birthday, Charlie!!
And it was actually close to 90 degrees in NH this long before summer?! I’m amazed! Maybe that’s normal, but that’s about what it is here in SC right now. Who knew? Enjoy the warmth! 🙂
My mouth is watering!

Tell Charlie his taste in ice cream is perfect!! Gonna use his flavor dynamic duo to whip up one of these beauties for our Memorial Day birthday party for Randy and Otto. Can’t wait to give it a whirl. Thanks for your tip on an alternate cookie for those of us who did not stash any extra Thin Mint boxes behind the ice cream maker. 🙂 The nice thing about your recipes Allie…is that I can always count on them being high reward and low risk. 🙂
Awwww…thank you Christy. Hope everyone loves it at the birthday party. Happy Birthday to Randy and Otto!!! XO
