Hi Melanie – hope you love this. You’re right, peeling the peaches is total preference. My kids prefer no peels. I dip my fresh, ripe peaches in boiling water for about 30 seconds to a minute, then add to ice water. Then the peel practically fall off when you tug on it. Otherwise, I think it might waste a lot of the good peach to use a paring knife. Do whatever works for you, and happy baking!

It’s similar to one I make already but I’m always trying to perfect it. One thing is I don’t peel my peaches and I’ve never gotten any complaints. Seems like a personal preference, but that would take too much time and effort. I’d rather save my time for eating!
