Hi Melanie - hope you love this. You&#039;re right, peeling the peaches is total preference. My kids prefer no peels. I dip my fresh, ripe peaches in boiling water for about 30 seconds to a minute, then add to ice water. Then the peel practically fall off when you tug on it. Otherwise, I think it might waste a lot of the good peach to use a paring knife. Do whatever works for you, and happy baking!]]></description>
