Hi Aunt Pinkie – I got the cheese in the specialty cheese refrigerated section at my local grocery store. It was near the feta. It did not come crumbled at my grocery store, I had to crumble it, but it wasn’t hard. Cotija is a salty fresh Mexican cheese similar to parmesan but a little softer. Hope you get to try this recipe.
