Hi Janet – VT Cheddar cheese is just cheese made in VT. You can honestly use any sharp cheddar cheese in this recipe. But since I’m in New England and biased lol, I’m partial to cheddar cheese made locally. I especially enjoy the cheddar cheese made at Cabot Creamery in Cabot, VT. Artisan Reserve Cheddar Cheese is my favorite Cabot cheddar cheese, aged for three years, a real treat!!! 🙂 Sure hope you enjoy these sandwiches. Allie
