Tell Charlie his taste in ice cream is perfect!! Gonna use his flavor dynamic duo to whip up one of these beauties for our Memorial Day birthday party for Randy and Otto. Can’t wait to give it a whirl. Thanks for your tip on an alternate cookie for those of us who did not stash any extra Thin Mint boxes behind the ice cream maker. 🙂 The nice thing about your recipes Allie…is that I can always count on them being high reward and low risk. 🙂

OH.MY. That’s about all I can say about this recipe. It looks so good!!!
I can’t believe how big Charlie is getting. Belated Happy Birthday, Charlie!!
And it was actually close to 90 degrees in NH this long before summer?! I’m amazed! Maybe that’s normal, but that’s about what it is here in SC right now. Who knew? Enjoy the warmth! 🙂

In reply to Karen @ On the Banks of Salt Creek. Yes, it was tricky with the Thin Mint cookies Karen. We bought 4 boxes this year from two separate adorable Brownies at our church. We promptly ate the three boxes, and I hid the last one in the pantry behind the ice cream maker that's fairly tall. I don't think any of the boys knew I had bought four boxes. So that was good. And thankfully I forgot about them for a while. When I rediscovered them it was just in time to make this ice cream pie.:) (You could also use Keebler Grasshopper chocolate mint cookies which are available all year...)
