Hi Marilyn – I don’t see why not, though I haven’t done it myself yet. As long as the volume is similar, it should be fine. Maybe check it a little early just in case it bakes faster. The winters are too cold here for peaches to grow, but we do have a Peach Man who brings peaches from about 200 miles away and they are amazing! I’ll be making this when the peaches arrive!
