Delicious!
I had white wine vinegar, which still tasted delicious. I am not a fan of fresh basil, so I charred it in olive oil first. Wonderful flavor with the creamy feta, smoky corn, and sweet tomatoes.

I made this salad and absolutely loved it! I want to make it again for company. Not all are a fan of feta. Do you think queso fresco would work here?

Hi Jenn – I’ve made this the night before with good results. It doesn’t really get soggy, but it’s prettier when freshly made, because the feta breaks down a little as it sits in the vinegar and olive oil. If you need to make this ahead, I suggest adding all the ingredients (except basil) to the bowl. (Don’t mix it.) Then add the feta on top, cover tightly and refrigerate. Just before serving, snip the basil fresh and gently mix it all together. Hope you love this salad!

I made this for dinner as a side with fresh local corn, cherry tomatoes from our garden (the Romas haven’t grown yet) and fresh basil from our garden too. My whole family loved it. I couldn’t stop eating it! Will definitely be making this again……tomorrow!
