Hey that’s awesome Nicole – thanks for the feedback. So glad they were a hit, my family loves these nad I need to make them again soon. I can imagine these and s’mores would definitely hit the spot at a holiday party. Butterfingers and sprinkles sound perfect. Have a super week!

I used my own softbach cookie recipe, but this was the best post explaining realisticy how to make and store these. Also, it’s the only mini ice cream sandwich post that made any sense. Trust me I tried some of the others that involved all these silly seps like spreaking out the icecream onto a sheet pan and cutting it with a cookie cutter! This is the only post I will use. This was a huge hit at our last BBQ We served them after we ran out of smores and everyone LOVED the size and toppings around the edges. we did mimi chips, butter fingers and sprinkles. And yes it was an adult party LOL
