Peas, vine ripened tomatoes and diced red onion combine with zesty Italian dressing for the easiest side dish ever.

<img loading="lazy" decoding="async" class="aligncenter wp-image-15888" src="http://throughherlookingglass.com/wp-content/uploads/2016/04/Easy-Pea-Salad6.jpg" alt="Four Ingredient Easy Pea Salad.
I remember enjoying a similar salad some years ago at Falls Cottage, a charming restaurant in Greenville, SC nestled in the hillside overlooking the beautiful Falls Park on the historic West End. (Not far from the Brick Street Cafe of the famed Brick Street Chocolate Cake.) The West End of Greenville has been revitalized in the last decade, and Falls Park is the oasis where people work, play and celebrate life in the city. The Liberty Bridge is an architectural wonder, an amazing suspension bridge that spans the the Reedy River Falls in the park, and easily viewed from the patio at Falls Cottage.

Today Falls Cottage is Mary’s Restaurant at Fall’s Cottage. And I hope they still serve this simple and delicious Easy Pea Salad alongside their signature sandwiches and entrees.

Take a bag of frozen organic sweet peas. Place them in a colander and run under cold water for a few minutes ’til thawed.

Drain and place in a serving bowl with chopped fresh tomatoes, diced red onion and zesty Italian dressing. Toss to coat and serve immediately!
