<p>I haven&#8217;t necessarily been holding out on you. It&#8217;s just I hadn&#8217;t thought about this amazing <em><strong>Marinated Brie Tomato &amp; Basil Linguine</strong></em> since last summer&#8217;s garden ripe tomatoes. <p>My cousin (who&#8217;s an excellent cook FYI) gave me this recipe several summers ago. If you love brie, you&#8217;ll be smitten with this easy dish.<em><strong> Marinated Brie Tomato &amp; Basil Linguine</strong></em> comes together like no other. EASY! The tomatoes remain uncooked, retaining their vibrant color.</p>

<p>They marinate in the serving bowl with pieces of torn brie, fresh garlic, basil and olive oil for several hours on the countertop. Just before serving, cook your linguine &#8217;til al dente and toss together with the marinating tomato mixture. The steaming linguine melts the brie. The tomato, brie and garlic meld together creating an unforgettably light and flavorful sauce. Serve immediately, warm. My friend Tracy says, &#8220;This, is summer in a dish!&#8221; (And she&#8217;s right.)</p>
<p>Top with extra basil strips and freshly grated parmesan for the perfect summertime meal. The recipe uses a pound and a half of linguine. Elegantly serves a crowd on the patio or dockside, and pairs beautifully with a glass of pinot.
