I love jalapeno poppers and make them often – but my recipe is quite different (I balance off the heat of the jalapeno seeds with a brown sugar rub on the bacon) – but I am so so loving your cream cheese and cheese mixture you use! Wow – I am willing to bet I could eat a sheet pan of these beauties! And that pre-cooking the bacon trick is brilliant – I didn’t know about it but cannot wait to do so now!
I’m keeping my fingers crossed its starting to warm up in your neck of the woods – would you believe it, it was in the 80s here this past weekend! High 70s today – think we had one week of spring and then “sprung” into summer temps 🙂 But I cannot complain as I’ll take the heat anyday!
